Job summary

Wynn Al Marjan Island is hiring an Assistant General Manager for the Lebanese restaurant to lead daily operations, ensure Forbes 5 Star standards, and drive guest satisfaction on a luxury resort platform in Ras Al Khaimah. You will manage staff, budgeting, menus, and training in a dynamic, high-volume setting.

Ideal candidates have 2–3 years leadership in fine dining, experience with Michelin/Guill Millau standards, and strong expertise in wine, service, and safety.

Qualifications

• 2–3 years leadership experience in fine dining (Assistant GM/Restaurant Manager)
• Experience in Michelin recognized or Gault Millau restaurants preferred
• Strong product knowledge of cuisine style and wine; WSET 2 preferred
• Working knowledge of budgeting basics, allergen management, and food safety
• Bachelor’s degree in hospitality management is an advantage
• Fluent spoken and written English, and another European language
• Proficient with MS Office and POS software; comfortable with digital reports and checklists
• Experience in luxury 5 star hotels/restaurants delivering exceptional dining experiences
• Background in fine dining operations (service and basic culinary coordination)
• International exposure in trendsetting markets is a plus

Responsibilities

• Execute daily shifts to SOPs, ensuring consistency and mise en place readiness
• Operate cost effectively within budgets; support GM in cost control, labor scheduling, inventory, and cash handling
• Develop and implement strategies and promotions to maximize revenue and seat utilization
• Coordinate with kitchen on menu availability, dietary needs, pacing, and specials
• Oversee reservations, waitlists, and floor plans to optimize guest flow
• Prepare daily shift reports; escalate issues and propose solutions to the GM
• Support restaurant administration and maintain proper logs and petty cash checks
• Provide day-to-day supervision and coaching to supervisors and service teams
• Maintain Forbes 5 Star service standards; conduct table touches and guest follow-ups
• Handle complaints promptly; involve GM when appropriate
• Provide VIP/media guest service and coordination with PR/VIP services
• Schedule training plans with F&B Trainer and GM; update SOPs
• Adhere to company policies and maintain professional appearance
• Follow health, safety and food hygiene standards; participate in sustainability initiatives
