Job summary

Isola Ristorante Italiano in Dubai is seeking a Junior Sous Chef to support the Sous and Head Chefs in daily kitchen operations, supervise food preparation, and uphold exceptional standards of quality, consistency and presentation.

Ideal candidates possess 2–4 years in upscale venues, strong knowledge of authentic Italian cuisine, experience mentoring junior staff, HACCP and food-safety know-how, and the ability to perform in a high-volume restaurant.

Qualifications

• 2–4 years of culinary experience in upscale or fine-dining settings.
• Experience as Junior Sous Chef or Chef de Partie.
• Strong knowledge of authentic and contemporary Italian cuisine.
• Experience supervising and training junior staff.
• HACCP and food-safety knowledge.

Responsibilities

• Support Head Chef and Sous Chef in managing daily kitchen operations.
• Supervise food preparation and service across assigned kitchen sections.
• Ensure dishes are prepared according to approved recipes and presentation standards.
• Maintain consistency in food quality, taste, portioning and presentation.
• Ensure mise en place is completed correctly and on time before each service.
• Allocate daily duties and monitor performance of junior culinary employees.
• Train, guide and motivate Commis Chefs and Chef de Parties.
• Assist with implementing new dishes, seasonal specials and menu changes.
• Monitor stock levels and assist with ordering, inventory and stock rotation.
• Control food portions and minimize waste.
• Ensure compliance with HACCP, food safety, hygiene and sanitation requirements.
• Check food storage, preparation areas and kitchen equipment regularly.
• Communicate effectively with front-of-house during service.
• Handle dietary requirements, allergies and special requests appropriately.
• Support kitchen team during busy services and events.
