Wynn Al Marjan Island in the UAE seeks a Sous Chef – IndoPersian to lead the Indo-Persian kitchen in a 5-star, luxury resort setting. You will drive daily operations and guest experience with a focus on quality and efficiency.

Develop weekly menus, monitor costs, coach the team, and ensure HACCP compliance while delivering exceptional dining. Requires 8 years in a top-tier kitchen with Indo-Persian expertise and strong leadership.

Qualifications

• Indo-Persian cuisine knowledge required, including cost control and pricing of ingredients and supplies.
• Leadership and supervisory skills to motivate and guide kitchen staff to high performance.
• Excellent communication and interpersonal skills with staff and management.
• Strong organizational and time management skills for overseeing inventory and schedules.
• High attention to detail, ensuring food quality, presentation, cleanliness, and safety compliance.
• Basic computer literacy and familiarity with kitchen management software.
• Minimum of 8 years’ experience in a 5-star kitchen, with substantial Indo-Persian experience and leadership.

Responsibilities

• Oversee daily Indo-Persian kitchen operations to ensure efficiency, consistency and culinary standards.
• Monitor resource use and optimize equipment, ingredients, and inventory.
• Develop weekly set menus, monthly promotions, and seasonal offerings with the Executive Chef.
• Ensure dishes are prepared to established recipes and presentation guidelines.
• Lead, coach and support the kitchen team to maintain performance and teamwork.
• Maintain kitchen cleanliness and HACCP, health and safety compliance.
• Deliver high-quality Indo-Persian cuisine and address guest requests and feedback.
