Job summary

Wynn Al Marjan Island seeks a General Manager for a South-East Asian restaurant to lead all F&B operations in a fine dining setting. You will oversee service, culinary, people, and financial performance to deliver an exceptional guest experience.

The ideal candidate has 3–4 years in similar roles, strong product knowledge, and budgeting skills, with international exposure and sommelier credentials considered an advantage.

Qualifications

• 3–4 years in a similar fine dining leadership role with 50+ covers/day.
• 2 star and 3–4 hat Gault Millau experience preferred.
• Strong product knowledge of fine dining and budgeting.
• Secondary education required; hospitality degree an advantage; WSET 2.
• Proficiency in MS Office and POS software; international exposure is a plus.
• Sommelier certification is an advantage; exceptional leadership and service skills.

Responsibilities

• Lead all aspects of restaurant operations, including service, culinary, people, and financial performance.
• Ensure flawless service standards, guest engagement and brand positioning.
• Drive top-line revenue while controlling costs, labour productivity, and profitability.
• Monitor daily performance and implement improvements.
• Coach, develop and evaluate department heads and staff.
• Collaborate on menu development, promotions and guest personalization.
• Analyse guest feedback and KPIs to drive continuous improvement.
• Ensure health, safety, licensing and hygiene compliance.
• Provide VIP guest service and manage inventory, scheduling, and reporting.
