Job summary

Wynn Al Marjan Island in Ras Al Khaimah is seeking an Assistant General Manager – Italian & Seafood to lead the resort’s Food & Beverage operations and guest experiences. You will oversee shifts, budgeting, inventory, and service standards, collaborate with the kitchen on menus and dietary needs, and coach supervisors to deliver Forbes 5 Star service and memorable dining for VIPs and media guests.

Qualifications

2–3 years leadership experience in fine dining, ideally in venues averaging 50+ covers/day.
Experience in Michelin recognized or Gault Millau restaurants preferred.
Fluent spoken and written English, and another European language.
Proficient with budgeting basics, allergen management, and food safety.
Bachelor’s degree in hospitality management an advantage; WSET 2 preferred.

Responsibilities

Execute daily shifts to SOPs, ensuring consistency and mise en place readiness.
Operate cost effectively within budgets; support GM in cost control, labor scheduling, inventory, and cash handling.
Develop and implement promotions to maximize revenue, seat utilization, and productivity.
Coordinate with kitchen on menu availability, dietary needs, pacing, and specials.
Oversee reservations, waitlist, and floor plans to optimize guest flow.
Prepare and present daily shift reports; elevate issues to the GM.
