Role Context
The Food and Beverage Supervisor supports the smooth operation of the assigned restaurant or outlet by maintaining service standards, coordinating employees, responding to guest needs, and assisting management throughout each shift. The position requires a visible, hands‑on presence during service and a clear understanding of menu knowledge, point‑of‑sale procedures, beverage preparation, cash handling, hygiene, and outlet presentation. Success in this role directly affects guest satisfaction, revenue control, service consistency, employee performance, and the overall reputation of the hotel.
Key Responsibilities
- Maintain required luxury quality assurance standards across the assigned food and beverage outlet.
- Review daily hotel updates, outlet communications, VIP arrivals, operational notes, and special guest requirements before each shift.
- Report for duty on time and communicate promptly with management regarding any unavoidable delay or absence.
- Maintain complete knowledge of menus, ingredients, preparation methods, garnishes, daily specials, alternative dishes, and beverage options.
- Explain food and beverage selections to guests clearly, accurately, and courteously.
- Present children's menus and suitable dining alternatives when required.
- Serve and clear food and beverages professionally using trays and approved service equipment.
- Operate the point‑of‑sale system to enter orders, process sales, print checks, close bills, and complete cash‑out procedures.
- Follow established cash, credit card, billing, and accounting controls.
- Carry trays and reset tables with linen, chinaware, glassware, silverware, and required condiments.
- Monitor guest satisfaction and resolve service concerns within the scope of authority.
- Escalate significant complaints or service failures to the supervisor or manager and record the action taken.
- Prepare specialty coffees, teas, alcoholic beverages, and non‑alcoholic drinks according to outlet standards.
- Keep service stations fully stocked with condiments, equipment, beverage supplies, and operating materials.
- Maintain a clean, orderly, and guest‑ready restaurant throughout opening, service, and closing periods.
- Polish cutlery and replenish salt, pepper, sugar, creamers, and other table supplies.
- Complete assigned opening and closing duties and ensure tables are arranged according to standards.
- Follow safety, sanitation, HACCP, food hygiene, and workplace cleanliness procedures.
- Maintain complete knowledge of hotel outlets, food and beverage services, facilities, and guest amenities.
- Report deviations from approved standards, procedures, or service expectations to management.
- Protect operating equipment through careful use, storage, cleaning, and routine inspection.
- Help reduce food waste, beverage variances, breakages, supply misuse, and equipment damage.
- Assist other food and beverage outlets during peak periods or operational shortages.
- Support management in supervising the assigned section and maintaining consistent service levels.
- Participate in daily briefings and communicate important operational information to restaurant employees.
- Train new and existing colleagues in service procedures, product knowledge, safety, and guest handling.
- Perform assigned trainer responsibilities and support internal learning initiatives.
- Use a practical coaching approach to develop employees, strengthen teamwork, and improve service performance.
- Conduct equipment and beverage inventories and investigate discrepancies.
- Understand outlet targets and contribute to revenue, quality, efficiency, and guest satisfaction goals.
- Complete other reasonable duties assigned by hotel management.
Ideal Profile
- Previous experience in food and beverage service within a hotel, restaurant, resort, or premium hospitality operation.
- Practical supervisory experience with the confidence to coordinate colleagues during busy service periods.
- Strong knowledge of restaurant service procedures, table setup, order taking, billing, and guest engagement.
- Ability to operate point‑of‑sale systems and other hotel technology platforms.
- Knowledge of specialty coffee, tea, alcoholic beverages, and non‑alcoholic drink service.
- Understanding of cash control, credit card processing, beverage inventory, and outlet closing procedures.
- Strong commitment to service excellence and luxury hospitality standards.
- Confident problem‑solving ability with a calm and solution‑focused approach.
- Excellent communication and interpersonal skills.
- Fluency in English, with additional languages considered an advantage.
