Job summary

Atlantis The Royal in Dubai seeks a Sous Chef specializing in Japanese and Peruvian cuisine to assist the Chef de Cuisine in leading daily kitchen operations. The role focuses on maintaining exceptional food quality, hygiene, and service in a luxury dining environment.

The candidate will supervise culinary colleagues, manage operations, and ensure adherence to standards and SOPs while coordinating with other departments to support seamless service.

Qualifications

• Hands-on experience with Japanese and Peruvian cuisine in a high-end culinary environment.
• Experience leading specialty kitchen operations and supervising culinary staff.
• Strong knowledge of hygiene, sanitation, and SOPs in luxury hotel kitchens.

Responsibilities

• Lead and manage daily specialty kitchen operations under the Chef de Cuisine.
• Organise culinary requirements according to established standards.
• Maintain high standards of food preparation, hygiene, and sanitation.
• Enforce SOPs and ensure service procedures are followed.
• Supervise and train culinary staff and maintain adequate stock of materials.
• Coordinate with other departments for smooth operations.
