Job summary

AccorHotels Middle East in Dubai is seeking a detail-oriented Demi Chef de Partie for the Cold Kitchen to join our culinary team. You will prepare and present cold dishes, salads, and charcuterie, under the supervision of the Chef de Partie, while maintaining your station, inventory, and food-safety standards.

You will also help with menu development and mentor junior staff, contributing to a high-quality dining experience for guests in a fast-paced kitchen environment.

Qualifications

• Experience in a professional cold kitchen or garde manger.
• Strong cold prep techniques for salads, charcuterie, and appetizers.
• Excellent knife skills and familiarity with kitchen tools.
• Solid knowledge of food safety, sanitation, and hygiene standards.
• Ability to work under pressure while maintaining quality.
• Good organizational and time-management skills.
• Strong teamwork and communication abilities.
• Ability to follow recipes and plating instructions precisely.

Responsibilities

• Prepare cold dishes, salads, appetizers, and charcuterie according to recipes.
• Maintain and organize the cold kitchen station and inventory.
• Execute precise knife cuts and maintain consistent plating.
• Monitor food quality, temperature, and freshness during service.
• Assist in menu development and seasonal specials for cold kitchen.
• Collaborate with kitchen team to ensure smooth workflow during peak hours.
• Follow all food safety, sanitation, and hygiene regulations.
• Receive and store ingredients using FIFO and rotate stock.
• Support Chef de Partie in training junior staff.
• Maintain inventory records and communicate stock needs.
• Adapt quickly to changing priorities while maintaining detail.
