Job summary

Mandarin Oriental Downtown, Dubai is seeking a Demi Chef de Partie to join the Banquets team. Based at the hotel, you will deliver high-quality dishes that meet our world-class standards, with focus on mise en place and precise execution.

The role requires a minimum of 2 years in a main kitchen, HACCP knowledge, and strong English communication. Formal culinary training is an advantage, and team collaboration is essential.

Qualifications

• High school diploma or equivalent; formal culinary training is an advantage.
• Minimum of 2 years’ experience as Demi Chef de Partie in a main kitchen or hot kitchen section of a 5-star hotel or high-end restaurant.
• Solid knowledge and hands-on experience in banquet/main kitchen.
• Strong understanding of HACCP and food safety practices.
• Effective communication skills in English (verbal & written); knowledge of additional languages is a plus.
• Previous experience in hotel pre-opening or renovation projects is highly desirable.
• Creativity, passion for cooking, and a team-oriented mindset.

Responsibilities

• Assist the Chef de Partie in the preparation and execution of high-quality dishes, and mise en place other items.
• Ensure all ingredients and recipes are followed precisely, maintaining consistency and excellence.
• Monitor stock and inventory levels in your section, ensuring timely requisitions and minimal waste.
• Collaborate with the team in the development of new recipes.
• Support broader kitchen operations and cross-functional tasks as needed.
• Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.
