Job summary

Mandarin Oriental Downtown Dubai is seeking a Demi Chef de Partie to join the Banquets section. You will assist in preparing and executing high-quality dishes, manage mise en place, and ensure strict adherence to recipes and standards.

You will monitor stock, collaborate on new recipes, and support broader kitchen operations while upholding HACCP and UAE hygiene requirements. English communication skills are essential, with additional languages a plus for a diverse hotel team.

Qualifications

• High school diploma or equivalent; formal culinary training is an advantage.
• Minimum of 2 years experience as Demi Chef de Partie in a main kitchen or hot kitchen section of a 5-star hotel or high-end restaurant.
• Solid knowledge and hands-on experience in banquet/main kitchen.
• Strong understanding of HACCP and food safety practices.
• Effective communication skills in English (verbal & written); knowledge of additional languages is a plus.
• Previous experience in hotel pre-opening or renovation projects is highly desirable.
• Creativity, passion for cooking, and a team-oriented mindset.

Responsibilities

• Assist the Chef de Partie in the preparation and execution of high-quality dishes.
• Mise en place and other tasks to support kitchen operations.
• Ensure all ingredients and recipes are followed precisely, maintaining consistency and excellence.
• Monitor stock and inventory levels in your section, ensuring timely requisitions and minimal waste.
• Collaborate with the team in the development of new recipes.
• Support broader kitchen operations and cross-functional tasks as needed.
• Uphold and comply with all health, food safety and hygiene standards in line with hotel policies, HACCP requirements including UAE Municipality mandates.
