Role Context
The Assistant General Manager works alongside the General Manager to oversee the complete operation of an assigned restaurant or dining concept.
The position is accountable for service consistency, colleague performance, financial discipline, staffing, food and labor costs, safety, hygiene, and compliance with Atlantis Resorts operating standards.
Success in this role depends on balancing detail, quality, volume, and profitability while developing a motivated team capable of delivering memorable guest experiences.
Key Responsibilities
- Support the General Manager in leading daily restaurant operations.
- Maintain consistently high standards across guest reception, table service, food delivery, beverage service, and departure experiences.
- Monitor service periods and take immediate action when operational standards are not being met.
- Lead pre‑shift briefings covering reservations, VIP guests, promotions, service priorities, staffing, and special requirements.
- Ensure the restaurant is fully prepared before opening, including staffing, equipment, table presentation, menus, and service stations.
- Oversee guest flow, table allocation, waiting times, and coordination between front‑of‑house and culinary teams.
- Engage with guests and resolve concerns professionally before they affect the overall dining experience.
- Support service recovery and follow up personally on significant complaints.
- Recruit, onboard, train, coach, and retain restaurant colleagues.
- Set clear performance expectations for supervisors, hosts, servers, bartenders, and support teams.
- Motivate employees to achieve service, sales, productivity, and guest satisfaction goals.
- Conduct performance discussions and support succession planning for high‑potential colleagues.
- Prepare staffing plans and schedules based on business forecasts, reservations, events, and operational demand.
- Monitor labor deployment and adjust team coverage to maintain efficiency.
- Review food cost, beverage cost, payroll, revenue, average spend, and profitability indicators.
- Support profit and loss management and implement corrective action when targets are missed.
- Identify opportunities to increase revenue through upselling, menu knowledge, promotions, and improved table utilization.
- Control wastage, complimentary items, discounts, voids, and operational expenses.
- Work closely with the General Manager on budgets, forecasts, and commercial plans.
- Coordinate with Culinary, Stewarding, Reservations, Finance, Procurement, Marketing, Human Resources, and Facilities teams.
- Ensure all restaurant activity complies with hygiene, food safety, licensing, security, and workplace safety requirements.
- Conduct routine inspections of dining areas, bars, storage rooms, service stations, and colleague facilities.
- Maintain compliance with company policies, standard operating procedures, and brand guidelines.
- Support concept launches, menu changes, special events, promotions, and seasonal campaigns.
- Review guest feedback, quality assurance results, and performance reports to identify improvement priorities.
- Maintain accurate operational, staffing, financial, and incident records.
- Take responsibility for the outlet when the General Manager is unavailable.
Ideal Profile
- Minimum 6 years of professional experience within Hospitality.
- At least 3 years of experience in an Assistant General Manager, Restaurant Manager, or comparable leadership position.
- Strong background in luxury hotels, high‑end restaurants, integrated resorts, or premium dining operations.
- Proven ability to lead large, multicultural front‑of‑house teams.
- Sound understanding of restaurant profit and loss management.
- Practical experience controlling food cost, labor cost, payroll, staffing, and operating expenses.
- Confident managing high‑volume service without compromising quality or attention to detail.
- Results‑driven approach with the ability to translate goals into clear team expectations.
- Strong leadership presence with excellent coaching, delegation, and motivation skills.
- Positive and adaptable when responding to operational changes or complex challenges.
- Excellent guest communication and complaint‑resolution capability.
- Able to build effective working relationships across culinary and support departments.
- Strong knowledge of restaurant service procedures, safety, hygiene, and brand compliance.
