Job summary

Wynn Al Marjan Island in the UAE seeks an Assistant General Manager – Italian & Seafood to lead daily fine-dining operations within a premier resort. You will oversee service standards, coordinate with kitchen, and drive guest satisfaction for VIP guests and media events.

The role requires 2–3 years leadership in fine dining, fluency in English, and a hospitality diploma; experience with Michelin/GA Haute cuisine and WSET 2 is preferred. A luxury brand with strong career progression awaits.

Qualifications

• 2–3 years leadership experience in fine dining.
• Experience in Michelin recognized or Gault Millau restaurants preferred.
• Strong product knowledge of cuisine style and wine; WSET 2 preferred.
• Working knowledge of budgeting basics, allergen management, and food safety.

Responsibilities

• Execute daily shifts to SOPs, ensuring consistency, timeliness, and mise en place readiness.
• Operate cost effectively within budgets; support GM in cost control, labor scheduling, inventory, and cash handling.
• Help develop and implement strategies and promotions to maximize revenue, seat utilization, and productivity.
• Coordinate with kitchen on menu availability, dietary needs, pacing, and specials.
• Oversee reservations, waitlist, and floor plans to optimize turn times and guest flow.
• Prepare and present daily shift reports; elevate issues and propose solutions to the GM.
• Support restaurant administration (timekeeping, petty cash checks, incident logs, stock counts).
• Provide day-to-day supervision and coaching to supervisors and service teams.
