Job summary

Wynn Al Marjan Island in the UAE seeks an Assistant General Manager to lead the Lebanese restaurant’s Food & Beverage team with a focus on Forbes 5 Star service. You will manage shifts, budgets, inventory, and guest flow to maximize revenue and guest satisfaction.

The ideal candidate has 2–3 years in fine dining leadership, experience in Michelin/Gault Millau venues, fluent English and another European language, budgeting, allergen management, and food safety know-how. WSET 2 is a plus.

Qualifications

• 2–3 years leadership experience in fine dining.
• Experience in Michelin recognized or Gault Millau restaurants preferred.
• Strong product knowledge of cuisine style and wine; WSET 2 preferred.
• Fluent English, another European language.

Responsibilities

• Execute daily shifts to SOPs; ensure consistency and mise en place readiness.
• Operate cost effectively within budgets; support GM in cost control, scheduling, inventory, and cash handling.
• Develop and implement business strategies and promotions to maximize revenue and guest flow.
• Coordinate with kitchen on menu availability, dietary needs, pacing, and specials.
• Oversee reservations, waitlist and floor plans to optimize turn times and guest flow.
• Prepare and present daily shift reports; escalate issues to GM with proposals.
• Support restaurant administration and maintain SOPs.
• Provide training and supervision to supervisors, captains, and service teams.
• Maintain Forbes 5 Star standards and guest satisfaction; handle complaints promptly.
