Raffles Dubai invites you to join the luxury team as a Commis I in Arabic Kitchen, preparing daily dishes according to business needs. You will work with the Chef de Partie to organize mise-en-place, ensure portion control, and support kitchen operations with a strong focus on quality and safety.

The role requires good English communication, a team spirit, and a willingness to uphold the Raffles standards of hospitality.

Responsibilities

• Report for duty punctually wearing the correct uniform at all times.
• Organize with Chef de Partie the shift on his/her section with regard to mise-en-place production and its service.
• Take orders from his/her Chef de Partie and carry them out in the correct manner.
• Write daily dry store, food requisitions and kitchen transfers for approval of the Executive Chef / Chef de Cuisine.
• Maintain good employee relations and motivate colleagues.
• Follow specifications regarding portion size, quantity and quality as laid down in the recipe index.
• Complete the daily checklist regarding mise-en-place and food storage.
• Attend daily and monthly meetings with the Chef de Cuisine and others.
• Report problems regarding machinery to the Chef de Cuisine and ensure follow-up.
• Check main information board and other operation information.
• Keep the section clean and tidy.
• Pass information to next shift.
• Log accidents and sickness and inform the Executive Chef / Chef de Cuisine.
• Assist in composing new recipes and menu ideas.
• Adhere to fire, hygiene and safety policies.
