Raffles Dubai invites you to join our Pastry Kitchen as Commis II to prepare mise en place and support food preparation as part of the kitchen brigade, reporting to the Chef de Partie. Minimum 1 year of F&B serving experience; English proficiency and teamwork are essential.

Responsibilities

• Report for duty punctually wearing the correct and clean uniform at all times.
• Organize with the Chef de Partie the shift on mise-en-place production and service.
• Take orders from the Chef de Partie and carry them out accordingly.
• Write daily dry store, food requisitions and kitchen transfers for approval to achieve high stock rotation.
• Maintain good employee relations and motivate colleagues.
• Adhere to portion size, quantity and quality as per recipe index.
• Complete the daily checklist regarding mise-en-place and food storage.
• Attend meetings with the Pastry Chef and Executive Pastry Chef.
• Report machinery issues and follow up on necessary repairs.
• Keep the information board Banquets updated and pass information to the next shift.
• Pass all information to next shift.
• Accidents and sickness logged and reported to Pastry Chef.
• Assist the Pastry Chef in composing new recipes and menu ideas.
• Adhere to fire, hygiene and safety policies.
