HotelJobs is seeking an experienced Restaurant General Manager for a premium casual dining concept in Cape Town. You will take full operational ownership from setup through opening, lead recruitment and training, and implement SOPs and supplier agreements to ensure a flawless launch.

You will manage full P&L, safeguard margins, drive revenue, and maintain exceptional guest experience while building a high-performance team on the floor.

We are seeking a seasoned, commercial, and high-energy RESTAURANT GM to take full operational ownership of this high-profile launch. An established, fast-expanding hospitality group from Johannesburg is bringing its next flagship dining concept to Cape Town’s iconic Mouille Point seafront. You will lead the setup phase in September, drive team recruitment, establish operational excellence, and position this venue as one of the Atlantic Seaboard’s leading dining destinations.

Key Responsibilities

• Pre-Opening & Setup: Drive operational readiness for an October grand opening, working closely with group executives and creative teams.
• Lead recruitment, onboarding, and intensive training for all Front-of-House staff to align with brand standards.
• Implement group SOPs, POS configurations, stock systems, and supplier agreements.
• Full P&L & Financial Management: Take ownership of the venue’s financial performance, including prime cost management (food, beverage, and labor control).
• Drive revenue targets, floor yields, and daily sales tracking.
• Operational & Floor Leadership: Maintain a strong, visible presence on the floor during peak service hours, driving guest delight and seamless operations.
• Foster a high-performance team culture built on accountability, hospitality, and product knowledge.
• Brand & Local Integration: Act as the brand ambassador in Cape Town, building strong local relationships, repeat clientele, and community presence.

Candidate Profile

• Experience: 5+ years of General Manager experience leading high-volume, premium dining restaurants or successful new venue openings.
• Track Record: Proven ability to manage full P&L, optimize operational margins, and lead large teams.
• Leadership Style: Hands-on, charismatic leader who leads from the floor, not behind a desk.
