Job summary

Fairmont Hotels & Resorts in Cape Town seeks an experienced Sommelier to lead our wine program, deliver exceptional guest experiences, and coordinate with culinary teams on wine pairings. You will manage stock, train staff, and maintain an up-to-date wine list in line with the hotel’s standards.

Ideal candidates have extensive Southern African wine knowledge, solid beverage service leadership, and Cape Wine Academy/WSET Level 2 certification.

Qualifications

• Previous experience as a Sommelier or wine steward.
• Ability to create food and wine pairings.
• Extensive knowledge of Southern African wines.
• Cape Wine Academy/WSET Level 2 certification is required.

Responsibilities

• Advise on wine and beverage pairings to complement the menu.
• Manage wine stock, dispensary, and Coravin systems.
• Lead and train F&B staff in beverage service.
• Maintain updated wine list and support menu updates.
• Ensure service adheres to brand standards and budgets.
• Coordinate with wine suppliers for updates and promotions.
