Job summary

Radiant Hospitality Company is seeking a Senior Sommelier to lead the wine programme at a premium contemporary Italian restaurant at the V&A Waterfront, Cape Town. You will own the wine list, cellar, and guest experience, with commercial responsibility for wine revenue and margins, reporting to the General Manager.

The ideal candidate has 3-4 years sommelier experience in a premium SA dining environment, holds a WSET or CMS qualification, fluent English, and the right to work in South Africa.

Qualifications

• 3-4 years of sommelier experience in a premium restaurant in South Africa.
• Ownership of a wine list and ability to manage the cellar.
• Formal wine qualification preferred (WSET or CMS).
• Fluent English and right to work in South Africa.

Responsibilities

• Curate and evolve a wine list that matches the menu and premium positioning.
• Build relationships with local and international suppliers and importers.
• Manage cellar, stock levels, rotation and storage conditions.
• Provide expert wine guidance and pairing recommendations to guests.
• Host tastings and events, and engage regular wine enthusiasts.
• Own wine revenue, cost of sales and margin targets.
• Analyse sales data to optimise the list and by-the-glass programme.
• Train staff on wine knowledge and upselling.
• Mentor junior sommeliers and service staff on wine service.
