Job summary

Radiant Hospitality Company in Cape Town invites a Senior Sommelier to lead the wine programme at a premium Italian restaurant at the V&A Waterfront. You will own the wine list, cellar, and guest experience with commercial responsibility for revenue and margins.

Reporting to the General Manager, you’ll shape the wine list from the ground up, mentor staff, and host tastings and events. 3–4 years’ SA sommelier experience and a strong SA/Mediterranean knowledge are essential.

Qualifications

• 3–4 years as a sommelier in a premium SA restaurant.
• Formal wine qualification preferred (WSET or CMS).
• Strong knowledge of South African wines and Mediterranean selections.
• Fluent English and right to work in South Africa.

Responsibilities

• Curate and evolve a wine list aligned with premium positioning.
• Maintain relationships with local/international suppliers and estates.
• Manage cellar, stock levels, rotation and storage conditions.
• Provide expert wine guidance and pairing recommendations to guests.
• Host tastings, pairing dinners and events for regular guests.
• Own wine revenue, cost of sales and margin targets.
• Analyse sales data to optimise list pricing and by-the-glass program.
• Train FOH staff on wine knowledge and service.
• Mentor junior sommeliers and service staff on wine service.
