Placements24 seeks an expert Sommelier and Wine Program Director for a premier Stellenbosch restaurant. You will curate the wine program, source premium wines, and manage cellar operations while delivering exceptional service to discerning guests.

Ideal candidates bring 7+ years in fine-dining wine roles, advanced sommelier credentials, and a passion for education and staff development. English fluency required, with additional languages a plus.

Qualifications

• Advanced sommelier certification or equivalent experience.
• 7+ years in a senior sommelier or wine program role.
• Exceptional knowledge of global wine regions and varietals.
• Proven ability to create and manage a wine program and cellar.
• Excellent communication and staff training skills.
• Strong inventory control and cost-conscious mindset.
• Fluency in English; additional languages a plus.

Responsibilities

• Develop, curate, and manage the restaurant's wine list to enhance the menu.
• Source wines through direct relationships with producers and distributors.
• Manage the wine cellar including inventory control and stocktakes.
• Provide expert wine service and recommendations to guests.
• Educate and train staff on wine knowledge, pairings, and service standards.
• Conduct wine tastings and staff education sessions.
• Stay informed on wine trends and emerging regions.
• Collaborate with the Executive Chef on food and wine pairing strategies.
• Manage the wine budget and ensure profitability.
• Represent the restaurant at wine events and industry gatherings.
