Placements24 presents an exciting Sous Chef opportunity at a premier Durban restaurant. The role supports the Executive Chef in daily kitchen operations, menu development, and staff leadership to sustain a Michelin-level dining experience.

The successful candidate will have substantial fine dining experience, formal culinary education, and a passion for culinary excellence in a fast-paced setting.

Qualifications

• Minimum 5 years in sous chef or senior chef de partie in fine dining.
• Formal culinary education or equivalent professional training.
• Proven leadership and ability to train kitchen staff.
• Strong cost control, inventory, and food safety knowledge.

Responsabilités

• Oversee kitchen operations with Executive Chef to ensure smooth service in Durban.
• Supervise and mentor junior staff, providing coaching on techniques and standards.
• Prepare and plate dishes per recipes and presentation guidelines.
• Contribute to menu development and seasonal specials.
• Manage inventory, ordering, receiving, and cost control.
• Ensure compliance with health, safety, and sanitation regulations.
• Perform quality checks on ingredients and finished dishes.
• Collaborate with kitchen and front-of-house for a cohesive dining experience.
• Act as stand-in for Executive Chef when needed.
