Placements24 is seeking an exceptional Executive Sous Chef for a fine dining establishment in Klerksdorp, North West. The role supports the Executive Chef in menu development, daily kitchen operations, and staff management, with a focus on high standards of food quality and presentation.

You will lead and train junior staff, manage food costing and inventory, ensure HACCP compliance, and contribute creative specials.

Qualifications

• Minimum of 5 years of experience in a progressive culinary role, with at least 2 years in a Sous Chef or similar position in fine dining or high-volume restaurant.
• Formal culinary qualification from a recognized institution is essential.
• Demonstrated expertise in various cooking techniques and cuisines.
• Strong leadership and team management skills.
• Knowledge of health, safety, and sanitation standards (e.g., HACCP).

Responsibilities

• Assist the Executive Chef in menu planning, recipe development, and costing.
• Oversee daily kitchen operations, ensuring smooth execution of service.
• Supervise, train, and mentor junior kitchen staff, fostering a positive and productive work environment.
• Maintain rigorous standards of food quality, preparation, and presentation.
• Ensure compliance with all health, safety, and sanitation regulations within the kitchen.
• Manage inventory levels, conduct stock takes, and control food costs effectively.
• Collaborate with the purchasing team to source high-quality ingredients.
• Cover for the Executive Chef during their absence.
• Contribute creative ideas for specials and new menu items.
• Uphold the restaurant's high standards of culinary excellence and brand reputation.
