Job summary

Placements24 is seeking an Executive Sous Chef in Cape Town to lead high-volume kitchens across fine dining, banqueting, and casual outlets. You will manage food production, develop menus, and mentor a diverse culinary team while maintaining top-tier quality and presentation.

You will oversee inventory, cost control, and HACCP compliance, collaborating with the F&B team to deliver outstanding guest experiences.

Qualifications

7+ years of culinary experience with at least 3 years in a Sous Chef or Executive Sous Chef role in a high-volume, fine-dining or luxury hotel.
Proven leadership, communication and team-management abilities.
Strong understanding of food costing, inventory, budgeting, and HACCP

Responsibilities

Assist the Executive Chef in overall kitchen management and production.
Supervise and train a kitchen team, ensuring recipe, portion, and cooking standards compliance.
Contribute to menu engineering, development, and presentation in line with market trends.
Manage inventory, ordering, receiving, storage, and waste minimization.
Enforce strict hygiene, sanitation and food safety standards (HACCP).
Control food costs through purchasing, prep, and waste management.
Conduct quality checks on dishes before service; collaborate with F&B to ensure seamless guest experience.
Act as Executive Chef in their absence and maintain a positive kitchen environment.
