About the Role

Our client, a prestigious five-star hotel located in the heart of Cape Town, Western Cape , is seeking an experienced and visionary Director of Food and Beverage . This senior leadership position is responsible for the strategic direction and operational management of all food and beverage outlets, banquets, and in-room dining services. The ideal candidate will possess a deep understanding of culinary trends, beverage management, service excellence, and financial acumen, ensuring the delivery of exceptional dining experiences that enhance the hotel's reputation and profitability. This role requires a dynamic leader passionate about creating memorable moments for guests in a vibrant and competitive market.

Key Responsibilities

• Develop and implement innovative F&B strategies to enhance guest satisfaction and drive revenue.
• Oversee the daily operations of all restaurants, bars, banqueting, and room service.
• Manage F&B budgets, including forecasting, cost control, inventory management, and labor expenses.
• Ensure consistent quality in food production, presentation, and service standards across all outlets.
• Create and update menus in collaboration with executive chefs, reflecting seasonal ingredients and current culinary trends.
• Develop and execute marketing and promotional plans for F&B offerings.
• Recruit, train, mentor, and manage the F&B team to ensure high performance and professional development.
• Maintain a strong working knowledge of beverage programs, including wine, spirits, and craft cocktails.
• Ensure compliance with all health, safety, and sanitation regulations.
• Collaborate with other departments to ensure seamless service delivery and positive guest experiences in Cape Town, Western Cape .

Requirements

• A minimum of 7 years of progressive experience in food and beverage management within the luxury hospitality sector, with at least 3 years in a director-level role.
• Proven track record of successfully managing multiple F&B outlets and large-scale banqueting operations.
• Strong financial management skills, including P&L responsibility, budgeting, and forecasting.
• Expertise in menu engineering, beverage management, and inventory control.
• Excellent leadership, team-building, and motivational abilities.
• Outstanding communication, interpersonal, and presentation skills.
• A diploma or degree in Hospitality Management, Culinary Arts, or a related field is highly desirable.
• Knowledge of local and international food and beverage trends is essential.
• Flexibility to work varied shifts, including evenings, weekends, and holidays, to support hotel operations in Cape Town, Western Cape .
