As an established, fast-expanding Johannesburg hospitality group prepares to launch its flagship seafront restaurant in Mouille Point, we are seeking an exceptionally talented BAR MANAGER WITH EXTENSIVE MIXOLOGY SKILLS to craft and drive our beverage program.

Key Responsibilities

• Pre-Opening & Menu Creation: Design; cost, and execute an innovative, high-volume cocktail menu featuring signature mixes, artisanal syrups, and local ingredients.
• Set up bar ergonomics, stock systems, prep schedules, and inventory controls.
• Recruit; onboard, and train a high-performing team of bartenders and barbacks in technical mixology, speed of service, and presentation.
• Bar Operations & Floor Presence: Oversee smooth daily bar service, ensuring exceptional speed, consistency, and presentation during high-volume periods.
• Engage with guests at the bar, creating a welcoming, high-energy atmosphere.
• Financial & Inventory Management: Drive bar profitability, manage stock levels, calculate GP margins, minimize spillage, and conduct regular audits.
• Cultivate strong relationships with beverage suppliers, brand representatives, and local craft distilleries.

Candidate Profile

• Technical Expertise: Proven, high-level mixology skills with a strong understanding of modern cocktail techniques, flavor profiling, and trend creation.
• Experience: Minimum 3 years of Bar Management experience in a busy, upmarket restaurant, premium cocktail lounge, or luxury hotel environment.
• Leadership: Dynamic leader with a passion for training and developing bar talent.
• Business Acumen: Highly proficient in stock management software, POS systems, recipe costing, and variance management.
