Job summary

Vandelay Hospitality Group seeks an experienced restaurant leader to join Drake’s Hollywood in Dallas, focusing on elevating wine service, education, and guest experiences in a high-volume, fine-dining setting.

You will guide the wine program, lead training, and ensure operational excellence while collaborating with culinary leadership to maintain brand standards and drive guest engagement.

Qualifications

• 5+ years in upscale, fine-dining leadership or similar role.
• Strong wine knowledge with service, sales, and pairing experience.
• Formal wine education or CMS/WSET preferred.
• Ability to train and develop service teams and maintain standards.

Responsibilities

• Lead daily floor operations with a strong presence and elevated guest experience.
• Serve as the restaurant’s wine expert, guiding guests and staff.
• Drive wine sales through informed recommendations and guest engagement.
• Oversee wine service standards, inventory, and cost controls.
• Partner with culinary leadership to evolve the wine program.
