Job summary

Hana Brands is seeking a Temp Sushi and Fresh Foods Chef to operate in a live sushi bar, handling sushi rice, fish prep, and fresh foods while upholding safety and quality. This temporary assignment requires independence and strict adherence to guidance, with emphasis on waste control and customer service.

You will be paid $200 per day, with hotel benefits if the assignment is out of town, and top performers may be considered for Franchisee ownership opportunities within Hana Brands network.

Qualifications

• Two or more years of food handling experience, plus either sushi rolling experience or a culinary degree.
• Excellent knife skills — capable of cutting sashimi, nigiri, and prepping vegetables for rolls.
• Valid food handler's card, or ability to obtain one before your first shift.
• Expert knowledge of food safety regulations and safe handling practices.
• Ability to communicate with customers and teammates in English.
• Professionalism and respect for coworkers and workplace at all times.
• Ability to work under pressure with sound judgement.
• Available to work the full length of the assignment and align with company mission.

Responsibilities

• Expert in cutting, slicing and filleting different types of fish, vegetables, and produce.
• Adhering to training guides, creating rolls per kiosk guidelines.
• Preparing sushi rice to spec, consistently each shift.
• Preparing various sushi dishes according to quality and safety guidelines.
• Preparing additional fresh foods including entrees and cut fruit as needed.
• Inspecting the quality of fruits, vegetables, and fish used.
• Understanding food waste and costs and how they impact kiosk goals.
• Producing to par levels and day’s volume to keep cases full without over-producing.
• Maintaining a clean work environment to prevent contamination.
• Sterilizing utensils and equipment before use, greeting customers to make them feel valued.
• Getting up to speed quickly in a new store layout and requirements.
