Job summary

Hana Brands in Massachusetts is seeking a Sushi Line Cook to join our kiosk production team. You will produce the full sushi assortment, including specialty items, ensuring quality, portion size, presentation, and food safety to company standards.

You will train new Sushi Prep Cooks on knife technique, recipes, and safety, monitor ingredient usage, and maintain clean, stocked workstations while delivering friendly, professional service to customers and store partners in a fast-paced environment.

Qualifications

• At least 2 years of hands-on food preparation experience in a restaurant or similar environment.
• Solid knife skills and consistent portioning; sushi experience preferred.
• Ability to follow recipes and food safety guidelines.
• English proficiency to understand recipes and communicate in the workplace.

Responsibilities

• Produce the full sushi assortment, including specialty and higher-complexity items, to company standards for quality, portion size, presentation, and food safety.
• Slice and portion fish from pre-portioned fillets and saku blocks; prep vegetables for rolls and garnishes.
• Prepare sushi rice and other ingredients according to recipes and specifications.
• Train new Sushi Prep Cooks on knife technique, recipes, specifications, and food safety procedures; provide feedback.
• Monitor production levels and ingredient usage to keep products available while controlling waste.
• Follow production guides, labels, and food safety procedures.
• Inspect ingredients before use and report quality concerns to the Sushi Team Leader.
• Greet customers and provide friendly, professional service.
