Hana Brands is seeking an experienced Sushi Line Cook for our kiosk to produce the full sushi assortment, including specialty items, ensuring quality, portion size, presentation, and food safety. You will work on the line with the kiosk team under the Sushi Team Leader, focusing on consistent production and helping train newer Sushi Prep Cooks on technique and recipes.

You will monitor production, manage ingredient usage, and reduce waste while adhering to company recipes and food safety

Qualifikationen

• 2+ years of hands-on food preparation in a restaurant/kitchen setting.
• Solid knife skills with consistent portioning and high-volume prep experience.
• Understanding of food safety, sanitation, temperature control, and cross-contamination prevention.
• Ability to read and follow recipes, product labels, and production guides in English.
• Willingness to train and support newer cooks.

Aufgaben

• Produce the full sushi assortment, including specialty and higher-complexity items.
• Slice and portion fish from pre-portioned fillets and saku blocks; prep vegetables.
• Prepare sushi rice and ingredients per recipes and specs.
• Train new Sushi Prep Cooks on knife technique, recipes, and food safety procedures.
• Monitor production levels and ingredient usage to minimize waste.
• Follow production guides, labeling requirements, and food safety procedures.
• Inspect ingredients for quality and report concerns.
• Keep utensils, equipment, workstations, and surfaces clean and organized.
• Greet customers and provide friendly, professional service.
