Job summary

The Nines, Portland, operated by Sage Hospitality Group, seeks a kitchen team member to ensure high-quality sushi service and adherence to recipes, sanitation, and portion standards. This role involves prep, stock rotation, and assisting with cost-control measures in a fast-paced environment.

Experience in a high-volume sushi operation is preferred; high school diploma or equivalent is required, with strong teamwork and communication with the kitchen staff.

Qualifications

• High school education required or equivalent.
• 1–2 years of experience in a related position with this company or other organizations.
• Sushi rolling in a high-volume operation preferred.
• Ability to work as a team member and communicate with kitchen staff.

Responsibilities

• Prepare food of consistent quality following recipe cards and production and portion standards.
• Start food items that are prepared ahead of time, avoiding over-preparation.
• Date all food containers and rotate per SOP, keeping perishables at proper temperatures.
• Check pars for shift use, determine necessary preparation, freezer pull and line setup.
• Note any out-of-stock items or shortages.
• Return unused food items on next shift to storage areas, cover/date perishables.
• Assist in planning actions to correct food cost problems; control food waste, loss and usage.
