Qualifications

• One year of restaurant experience required for Chef B; two+ years for senior stations.
• Knife skills including cleaning, filleting, and portioning fish.
• Safety certifications such as SafeServe required and can be obtained during training.
• Japanese cuisine knowledge is welcome but not required.
• Willingness to learn and memorize the entire menu and standards.

Responsibilities

• Slice and plate sashimi to standard with proper fish handling and freshness.
• Keep fish at proper temperature and follow storage steps.
• Check quality before plating and remove anything below standard.
• Maintain precise and consistent cuts from first order to last.
• Roll station: set up, execute all rolls accurately and on time.
