Qualifications

• One year of restaurant experience required for Chef B; two or more years for senior stations (Chef A).
• Japanese cuisine knowledge is welcome but not required.
• SafeServe, allergy compliance, and sexual harassment prevention certifications required and can be obtained during training.

Responsibilities

• Slice and plate all sashimi to standard with proper fish handling and freshness.
• Keep fish at proper temperature and follow handling and storage steps.
• Check quality before plating and remove below-standard items.
• Keep cuts precise and consistent from first to last order.
• Set up roll station mise-en-place before service; execute all hand rolls accurately.
