Position Summary

We seek an experienced Sushi Chef (Chef de Partie) with a strong background in authentic sushi, traditional Japanese ingredients, and a commitment to quality and precision. The role requires technical mastery and teamwork in a high-end Japanese dining setting.

Essential Duties & Responsibilities
  • Prepare and present sushi dishes with precision and aesthetic excellence.
  • Handle fish preparation, including filleting, portioning, and curing.
  • Ensure proper rice preparation and seasoning.
  • Maintain hygiene and food safety standards, especially with raw seafood.
  • Support daily mise en place and service alongside senior chefs.
  • Manage inventory of ingredients and tools.
  • Mentor and train junior staff.
  • Contribute to menu development and seasonal dishes.
Minimum Qualifications
  • At least 2 years of hands-on sushi preparation experience.
  • Proficiency in knife skills for sashimi and nigiri.
  • Knowledge of Japanese culinary techniques and ingredients.
  • Availability to work nights, weekends, and holidays.
  • Strong work ethic, customer focus, and stable employment history.
  • Commitment to a clean and safe working environment.
  • Ability to multitask with attention to detail.
  • Experience in a structured kitchen hierarchy.
Physical Demands & Work Environment
  • Flexibility and open-mindedness for various tasks.
  • Operate all necessary equipment.
