Key Responsibilities
  • Supervise product delivery for the Bakery night shift, ensuring compliance with Company recipes and maintaining presentation standards.
  • Ensure product quality through tasting and monitoring during production, as instructed by the Executive Chef / Chief Baker.
  • Follow recipes accurately for Danish pastries, muffins, bread, etc., maintaining accessible recipe files.
  • Supervise bakery staff for breakfast production and operational activities as directed.
  • Participate in daily briefings with the Chief Baker to discuss operational performance and upcoming events.
  • Conduct shift briefings with bakery staff at the start of each shift.
  • Control food consumption through portioning and recipe adherence.
  • Meet bakery cost targets as directed.
  • Create effective daily/shift production schedules based on itinerary and outlet needs.
  • Monitor ingredient usage and inform the Chief Baker for ordering.
  • Stay updated on new trends and production methods, seeking guidance as needed.
  • Evaluate bakery staff performance, mentoring top performers for career advancement.
  • Train and coach staff on production techniques, recipes, presentation, and delivery.
  • Assist in training new bakery staff as directed.
Skills, Knowledge & Expertise
  • Formal qualification in Pastry/Bakery from a recognized institution.
  • Minimum 5 years bakery experience, with at least 2 years as CDP Baker in high-volume production; cruise ship experience preferred.
  • Strong knowledge of international bakery recipes and techniques.
  • Proficient in English, both verbal and written.
  • Understanding of guest service fundamentals and a commitment to outstanding service.
  • Excellent communication and supervisory skills with a friendly personality.
  • Ability to consistently surprise and delight guests.
  • Maintain professional relationships in a diverse environment.
