Job summary

Kickapoo Lucky Eagle Casino Hotel is seeking an experienced Kitchen Operations professional to assist the Executive Chef in all areas of food production, sanitation, cost control, and staff training. You will organize the different food operations to attract gaming guests and contribute to the department's success.

The role requires strong English communication, leadership, and the ability to work in a fast-paced, high-standards kitchen environment.

Qualifications

• Must have High School Diploma or GED.
• A degree from an accredited culinary school is preferred.
• Opening or start up experience, preferred.
• Minimum three (3) years BOH experience in a Management/Supervisory position in a full service à la carte restaurant, fine dining and/or Steakhouse concept, preferred.
• Strong communication skills in English both written and oral. Spanish or other language skills a plus.

Responsibilities

• Assist Executive Chef in all areas of food production, sanitation, presentation and cost control.
• Train staff and organize food operations to attract and retain gaming guests.
• Ensure compliance with laws, policies and procedures.
• Maintain high guest service standards and respond to guest/staff concerns.
• Manage cooking schedules, production needs and daily reports.
• Oversee set up and readiness of outlets; ensure timely openings.
• Monitor time/temperature logs and kitchen cleanliness.
• Create recipe cards and train cooks on their use.
• Prepare dishes for normal service and special events.
• Develop steakhouse menus and daily features to attract guests.
• Assist with annual budget process and staffing recommendations.
• Promote core values and MAD skills; safeguard confidential information.
• Adhere to currency reporting, AML policies and CTR/SAR requirements.
