Job summary

Kickapoo Lucky Eagle Casino Hotel is seeking a lead kitchen professional to assist the Sous Chef with food production, sanitation, and cost control. You will help train staff, organize kitchen operations, and ensure high standards across outlets.

Responsibilities include inventory oversight, policy compliance, and menu item reviews under Chefs' direction. The role requires strong English communication and leadership in a fast-paced casino environment.

Qualifications

• Must have High School Diploma or GED.
• Minimum of four (4) years progressive experience in hotel, resort, casino or high-volume restaurant.
• Culinary Degree, preferred.
• Strong communication skills in English both written and oral. Spanish or other language skills a plus.

Responsibilities

• Assist the Sous Chef with all areas of food production, sanitation, presentation, cost control, training of staff and organization of the different food operations.
• Ensure compliance with applicable laws and gaming regulations and Kickapoo Lucky Eagle policies.
• Supervise day-to-day activities of team members including scheduling, training and performance management.
• Ensure all prepared food products meet established specifications and standards.
• Monitor inventory, par levels, and assist with budgetary controls by cost containment.
• Maintain sanitary, neat, clean, and safe kitchen environment for staff and guests.
• Review menu items and make changes as directed by Chefs.
