Kickapoo Lucky Eagle Casino Hotel is seeking an Executive Sous Chef to assist the Executive Chef in food production, sanitation, cost control, and staff training across our kitchen operations. The role drives menu design and maintains high standards to deliver exceptional guest experiences while achieving revenue targets.

The position requires leading kitchen teams, ensuring compliance with laws and internal policies, and managing daily production, schedules, and training.

Qualifications

• HS diploma or GED is required.
• A culinary certificate or degree is preferred.
• 7–10 years of kitchen experience in a fast-paced environment.
• Strong English communication skills, Spanish or another language is a plus.

Responsibilities

• Ensure compliance with tribal, federal, and gaming regulations and Kickapoo Lucky Eagle policies.
• Maintain high guest service standards and respond to guest and staff concerns.
• Ensure food products meet specifications and forecasted needs; manage timely delivery.
• Assign tasks efficiently to optimize labor and daily production.
• Prepare dishes for events and supervise menu/card creation and changes.
• Assist Executive Chef with budgeting, staffing, and kitchen equipment decisions.
