Job summary

MGM Resorts International in Las Vegas is seeking a Convention-Banquet Sous Chef to lead banquet culinary operations, ensuring outstanding food quality, flawless presentation, and seamless execution for large-scale events. Qualifications

• 2+ years of culinary experience in a high-volume environment.
• 5+ years preferred in high-volume hospitality, hotel/casino, banquet, or resort culinary operations.
• Familiarity with Oracle is a strong plus for operational and inventory management.
• Flexible and dependable, with the ability to work early mornings, late nights, weekends, holidays, and high-demand event schedules.
• Union / CBA experience strongly preferred.

Responsibilities

• Maintain quality and proper presentation of food
• Drive the customer relation management system by ensuring that all such orders are handled correctly
• Communicate with chefs, management, employees and guest efficiently with proper reporting, and meetings
• Schedule and maintain the budgeted labor costs as well as potential food cost
• Understand and utilize Stratton Warren system properly for purchasing, release orders and cost transfers

THE DAY-TO-DAY:

• Maintain quality and proper presentation of food
• Drive the customer relation management system by ensuring that all such orders are handled correctly
• Communicate with chefs, management, employees and guest efficiently with proper reporting, and meetings

THE IDEAL CANDIDATE:

• 2+ years of culinary experience in a high-volume environment required, with 5+ years preferred in high-volume hospitality, hotel/casino, banquet, or resort culinary operations
• Strong preference for candidates with a banquet background, ideally with experience supporting large-scale events, high-volume production, and elevated food execution
• Familiarity with Oracle is a strong plus for operational and inventory management
• Flexible and dependable, with the ability to work early mornings, late nights, weekends, holidays, and high-demand event schedules
