Job summary

MGM Resorts International in Las Vegas is seeking an inspirational Assistant General Manager for Mayfair Supper Club at Bellagio to lead daily restaurant operations and drive guest service excellence.

Partner with the General Manager to manage budgets, labor, scheduling, HR, and service standards; ensure health and safety, coordinate kitchen-to-floor operations, and develop top talent in a high-energy, high-volume setting.

Qualifications

• High School Diploma or GED is required.
• 2+ years of prior relevant restaurant experience.
• 3+ years of experience in a high-volume restaurant setting preferred.
• Prior experience in a high-energy restaurant with live entertainment preferred.

Responsibilities

• Lead and manage daily restaurant operations, budgets, labor, scheduling, inventory, and guest service standards.
• Support the General Manager with human resources responsibilities and staff development.
• Interact with guests to ensure satisfaction and manage feedback channels.
• Ensure policy execution, training programs, menus, and compliance across the restaurant staff.
• Maintain knowledge of venue food & beverage products, menus, and equipment.

THE JOB:

Within Mayfair Supper Club at Bellagio, where luxury hospitality and world-class entertainment create unforgettable experiences, we are seeking an inspiring Assistant General Manager to help lead one of Las Vegas' most iconic dining destinations. Partnering closely with the General Manager, this leader will drive operational excellence, team development, financial performance, and exceptional guest service. The ideal candidate is a dynamic floor leader who thrives in a high-energy environment, develops top talent, and is passionate about delivering the elevated hospitality experience that defines Mayfair Supper Club and Bellagio.

THE DAY-TO-DAY:

• Lead and manage daily restaurant operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and execution of marketing strategies to produce short-term profitability. Execute on the restaurant’s business plan and assist General Manager with developing and executing tactics to achieve goals and targets
• Assist General Manager with managing Human Resources responsibilities for Restaurant to include: creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning process that encompass the company’s diversity commitment; adherence to the company’s status quo third party representation philosophy; compliance with company policies, legal requirements, employment law, and collective bargaining agreements
• Interacts with guests frequently to ensure satisfaction and enjoyment of dining experience. Reacts to any guest complaints and takes any appropriate action. Manages Restaurant’s guest feedback channels through approved company practices. Work alongside the culinary team to ensure a seamless service experience between kitchen and dining room.
• Responsible for execution of policies, operating procedures, training programs, directives, menus, rules and regulations for the restaurant staff. Owns restaurant’s execution of F&B and/or company-wide initiatives and programs. Maintain the highest standards of health, sanitation and cleanliness with in all areas of Beverage. Responsible for completion of all company compliance training by the restaurant staff.
• Maintains excellent knowledge of venue’s food & beverage products, menu items and equipment used to perform duties.

THE IDEAL CANDIDATE:

• High School Diploma or GED required
• 2+ Years of prior relevant experience required
• 3+ years of experience in a high-volume restaurant setting preferred
• Prior experience in a high-energy restaurant with live entertainment preferred
