Job summary

Workstream is seeking an experienced Smokehouse Clerk for Holiday Market's culinary team in Michigan. You will manage smokers, prepare meats and sides, and ensure quality control across high-volume retail and catering operations.

This role requires knowledge of meat cuts, rubs, temperature control, strong customer service, and the ability to work weekends and holidays. Safe handling, teamwork, and the ability to lift up to 50 lbs are essential.

• Experience in a commercial smokehouse, BBQ restaurant, or high-volume kitchen.
• Knowledge of meat cuts, rubs, and precise temperature control.
• Strong communication and customer service skills.

Responsibilities

• Manage daily operation of smokers, from trimming and seasoning to temp monitoring.
• Provide friendly customer service to shoppers and guests.
• Prepare meats, house-made sides, and catering components for retail and events.
• Uphold food safety, sanitation, and equipment maintenance standards.
• Monitor inventory and assist with restocking as needed.
• Advise customers on products, smoking methods, and meat cuts.
• Operate slicers and scales safely and efficiently.
