Job summary

Carl Buddig and Company, based in Montgomery, IL, is seeking a General Labor/Packaging – Smokehouse Technician to produce and package cooked products while upholding our safety culture. This role requires strict adherence to GMP/HACCP/SQF guidelines and accurate record-keeping within a fast-paced smokehouse environment.

The ideal candidate will operate under safety protocols, maintain oven processes, and support cross-training.

Qualifications

• Experience in a smokehouse or similar manufacturing environment.
• Knowledge of GMP, HACCP and SQF standards.
• Capability to perform detailed product checks and record keeping.
• Strong safety awareness and ability to enforce safety practices.

Responsibilities

• Implement proper procedures for the Smokehouse department.
• Understand GMPs, HACCP and SQF guidelines.
• Maintain an accurate oven process rotation to support cross training.
• Perform oven washdown.
• Document HACCP checks via red zone.
• Perform product checks during shift (oven temperature, Powis graphs, pH monitoring, CCP1 lethality stage, and CCP2 temperature check).
• Perform direct observations during cooking cycle.
• Perform pre-flight oven checks before every smokehouse load.
• Complete Safety/SQF monthly training.
• Follow schedules to ensure all products are cooked and completed on time.
• Analyze situations and provide solutions that benefit the company.
• Maintain accurate smoking records and reports.
• Make decisions on production errors and deviations.
• Maintain a safe work environment, monitoring foot traffic and complying with forklift regulations.
• Perform monthly cooler deep cleans according to SSOP requirements.
