Job summary

The Polo Club of Boca Raton in Boca Raton, FL is seeking an experienced Pastry Sous Chef to manage and coordinate all pastry activities for functions, ala carte and buffets. You will lead pastry cooks, develop desserts, and ensure top quality and sanitation standards.

Reporting to the Executive Pastry Chef, you will decorate showpieces, train staff, monitor costs, and help create innovative bakery items while upholding club standards and guest satisfaction.

Qualifications

• Requires advanced knowledge of bakeshop and kitchen equipment.
• Advanced knife skills required.
• Solid understanding of pastry preparation.
• Strong culinary knowledge both practical and theoretical.
• Able to stand for long periods.
• Able to read and interpret business materials and write reports.
• Strong English communication and teamwork.

Responsibilities

• Plan production for the pastry department according to menus and BEOS and/or special requirements directed by the executive pastry chef.
• Attends BEO meetings upon request and supplies recipes as needed.
• Decorates and presents showpieces, specialty cakes and show pastries using chocolate, sugar paste, fondant, and icings; guides pastry team.
• Monitors staffing and production, controls costs, and maintains production records.
• Ensures items are prepared on schedule and coordinates events with the Chef and staff.
• Maintains sanitary codes per Federal, State and Local agencies and club standards.
• Secures feedback from chefs and members on pastry quality for ala carte and buffets.
• Develops, tests, and implements new products and ensures quality control of all bakery items.
