Job summary

Emerald Queen Casino is seeking an experienced Asian Cuisine Chef to support the Executive and Production Chefs in running a profitable Asian kitchen. The role oversees cooks and shift leaders, plans daily specials, and drives cost control while maintaining top quality and strict sanitation.

Qualifications

• High School diploma or GED.
• Sanitation laws and procedures training.
• Culinary school graduate or equivalent experience.
• At least five years in kitchen management including Asian cuisine cooking and food prep.
• Knowledge of kitchen procedures and State Board of Health regulations.
• Ability to operate cooking equipment, sautéing/broiling/steaming/baking, and advanced knife skills.
• Basic understanding of P&L statements.
• Must be a motivator and demonstrate superior employee relations.

Responsibilities

• Assist in the efficient operation of the Asian Cuisine kitchen.
• Assist in hiring, scheduling, and training of Asian Cuisine Shift Supervisors, Leads, and Cooks.
• Assist in planning daily specials for lunch and dinner.
• Provide input to the Executive Chef on procedures and operations and make recommendations.
• Help implement policies and procedures.
• Ensure staff comply with portion size and quality standards.
• Procure food, including cuts of meat, poultry, shellfish, fish, game and vegetables.
• Assist in cost control of food, labor, and supplies.
• Maintain security of products by issuing proper amounts.
• Control kitchen energy costs.
• Work regular shifts on the line.
• Provide daily/weekly prep and cleaning lists for staff.
• Ensure areas are set up properly and kitchen/storeroom remains clean.
• Ensure walk-ins/storage are neat and organized.
• Maintain Emerald Queen Casino’s high standards for guest service.
• Promote good employee relations and teamwork.
• Perform other duties as assigned.
