Job summary

Emerald Queen Casino seeks an Asian Cuisine Chef to assist the Executive and Production Chefs in managing the Asian kitchen, ensuring efficiency and profitability while supervising Cooks. You will help hire, schedule, and train shifts, plan daily specials, enforce portion controls, manage food procurement, and monitor energy costs.

The role requires at least five years in kitchen management and a culinary school background.

Qualifications

• High School diploma or GED required.
• Sanitation laws and procedures understanding.
• Culinary school graduate or equivalent experience.
• At least five years in kitchen management including Asian cuisine cooking.
• Knowledge of kitchen procedures and health regulations.
• Ability to operate cooking equipment with multiple techniques and knife skills.
• Basic understanding of P&L statements.
• Motivator with strong employee relations.

Responsibilities

• Assist Executive Chef in efficient operation of the Asian Cuisine kitchen.
• Assist hiring, scheduling, and training of Asian Cuisine staff.
• Assist Production Chef in planning daily lunch/dinner specials.
• Provide input to Executive Chef on procedures and operations.
• Help implement policies and procedures.
• Ensure compliance with portion size and quality standards.
• Oversee procurement of food ingredients and supplies.
• Support cost control of food, labor, and supplies.
• Maintain security and proper storage of all products.
• Control energy costs in the kitchen.
• Work regular shifts on the line.
• Provide daily/weekly prep and cleaning lists for staff.
• Keep kitchen, dish room, and storeroom clean and sanitary.
• Maintain organized walk-ins and storage areas.
• Uphold Emerald Queen Casino’s guest service standards.
• Foster positive employee relations and teamwork.
• Perform other duties as assigned.
