Job summary

Commerce Casino is seeking an experienced Asian Cuisine Chef to oversee the back-of-house operation and leadership of kitchen staff. You will manage daily production, ensure quality, and drive cost controls across a high-volume Asian program.

Responsibilities include training, hiring, and scheduling, developing menus with seasonal influences, and maintaining HACCP and service standards in alignment with culinary leadership.

Qualifications

• Minimum 3–5 years in Asian culinary cuisines in high-volume settings.
• Strong leadership, training, and scheduling abilities.
• Proficient in Birchstreet/RedRock inventory and purchasing workflows.
• Experience with Micros POS and reporting.
• College degree or 5 years restaurant experience.

Responsibilities

• Oversee day-to-day operation of Asian Cuisine program and back-of-house staff.
• Organize Kitchen Management to run each Food & Beverage revenue center efficiently.
• Lead, evaluate, train, hire, and schedule all kitchen personnel (Asian dishes).
• Train and execute rotating Asian cuisines; source ingredients and help create recipes.
• Supervise all food production to meet quality standards and enforce corrective actions.
