Qualifications

• Proficient knife skills and basic butchery knowledge.
• Ability to cook proteins to specified temperatures while maintaining consistency.
• Understanding flavor balance, seasoning, and sauce preparation.
• Follow standardized recipes and maintain plating standards.
• Work well under pressure in a high-volume kitchen.

Responsibilities

• Set up and maintain the sauté station with mise en place before service.
• Execute sautéed proteins, vegetables, sauces, pasta, and specialty dishes.
• Maintain proper cooking temperatures, seasoning, texture, and presentation.
• Read and prioritize tickets and manage ticket times.
• Coordinate timing with other stations to ensure circled courses.
• Taste and adjust dishes under chef direction.
• Ensure consistent portions and plating standards.
• Maintain a clean and sanitary workstation.
• Assist with prep, banquet production, and other duties as needed.
• Support and train junior cooks when requested.
