Job summary

Target Hospitality in New Mexico is seeking a Chef I to join our lodge kitchen team. The role reports to the Head Chef and operates on a 6 weeks on / 2 weeks off rotation, handling daily menu production and guest service to high standards.

Ideal candidates have 1+ year culinary experience, English proficiency, and ServSafe certification. The job emphasizes safety, teamwork, and adherence to HACCP guidelines in a fast-paced environment.

Qualifications

• 1+ years culinary experience, remote camp or hotel/hospitality background preferred.
• Strong English communication skills, both spoken and written.

Responsibilities

• Maintain a safety culture by following SOPs, JSAs, and Target Hospitality policies.
• Safely operate kitchen equipment (grills, slicers, tilt skillets, deep fryers, convection ovens).
• Prepare meals on the line and through grills/ovens/fryers.
• Serve guests with attentive service and monitor meal scans.
• Ensure HACCP and food safety standards in all preparations and service.
• Proper food storage, rotation (FIFO) and disposal of expired items.
