Qualifications

• Bachelor’s degree in Dietetics, Nutrition, or related field required.
• Current registration with the Commission on Dietetic Registration (CDR) required.
• ServSafe Certification or ServSafe certification within 90 days of employment.
• Knowledge of MDS, care planning, and clinical documentation standards.
• Knowledge of applicable federal and state regulations governing dietary and nutritional services.

Responsibilities

• Oversees the dietary department and provides supervision to the dietary staff to ensure nutritional needs are met.
• Carries out supervisory responsibilities in accordance with policies and laws.
• Oversees the purchase of food and supplies within budget and maintains adequate meal coverage.
• Provides guidance on diet planning, menu formulation, preparation and service of regular and therapeutic diets.
• Ensures menus meet resident nutritional needs and physician orders.
• Interviews residents or family members to obtain diet history.
• Monitors weekly and monthly weights and collaborates with nursing staff.
• Maintains records, handles sanitation rounds and ensures compliance with sanitation and safety standards.
