Job summary

Hissho Sushi, Inc. is seeking a Prep Cook to join our commissary production team in Chester. You will prepare all essential ingredients for daily manufacturing, handling seafood, vegetables, and rice in a fast-paced, food-safe environment to ensure smooth production later in the day.

You will follow standardized recipes, maintain prep logs, assist with setup, and help keep a clean, organized workspace. ServSafe certification is required or obtainable; prior kitchen or production experience is

Qualifications

• ServSafe certification is required or willingness to obtain certification.
• Experience in restaurant, commissary, or production kitchen is preferred.
• Basic understanding of food safety, sanitation, handwashing, and cross-contamination prevention.
• Experience preparing rice, vegetables, seafood, or ready-to-eat foods is a plus.
• Ability to follow recipes, prep lists, batch sheets, and standard operating procedures.

Responsibilities

• Prepare sushi rice according to standardized recipes and quality standards.
• Wash, peel, and cut produce for daily batches.
• Defrost and portion seafood and other ingredients to spec, following HACCP protocols.
• Maintain ingredient storage, rotation, and labeling (FIFO).
• Record and verify daily prep logs (rice pH, temperature, cooling).
• Assist in setup for production shift and stocking of tables/equipment.
