Job summary

Compass Group USA is seeking a skilled sushi preparer for 310 Provisions at Intuit Dome. You will maintain sushi standards, prep in a timely fashion, and assist the Executive Sous Chef of sushi to deliver high-volume service.

The role requires knowledge of sushi techniques, HACCP and food safety, plus ability to read recipes and work under pressure in a fast-paced team environment. Minimum 2 years in culinary field; Culinary Education Degree preferred.

Qualifications

• Minimum 2 years experience in culinary field with high-volume production
• Culinary Education Degree or equivalent
• Must be 18+ years old
• Proven knowledge of culinary and sushi techniques
• Ability to read and understand recipes

Responsibilities

• Maintains sushi standards and specifications daily
• Prep is timely; assists with sushi prep as needed
• Coordinates sushi drops and checks quality of orders
• Makes nigiri, sashimi, rolls and handrolls
• Inventory, estimates production needs and plans production
• Ensures food safety and HACCP compliance
• Presents prep details to team and guests
